True Basmati elongates considerably beyond its raw length when cooked, without breaking. 1121 is graded specifically for this — it's what's meant by “extra-long grain.”
Paddy is rested before milling so the grain loses surface moisture gradually. Under-aged rice tends to break in the pot; properly aged rice holds its shape.
Basmati's signature scent comes from a naturally occurring aroma compound. 1509 is specifically valued in our range for how consistently it carries this across lots.

At least four times as long as it is wide, averaging above 6 mm. Basmati is the common example, and this is our core expertise.
About three times as long as it is wide, and more economical than long grain. Sona Masuri, Ponni and Matta are typical.
Short, fat and round, with a higher starch level — used for pudding and sushi. Not a category we specialise in.
